So my first night back at home after my first year at uni I decided to treat my family to my (unexperienced) cooking skills. My mum (and now me) is a huge health freak and veggie lover, so decided to whip up some dishes and give her a break from the dinner chore.
First was the Griddled Asparagus with Parmesan and Balsamic vinegar
-Trimmed the ends off, glazed with olive oil and grilled for 10 minutes
-Once cooked drizzled with olive oil and balsamic vinegar and decorated with parmesan shavings
and then decorated with balsamic glaze, mmmmm
Next dish was Roasted Mozzarella filled Peppers with Chilli & Pine nuts
- Drizzled in olive oil and baked for 15 mins until softened
-Added a chunk of mozzarella and allowed it to melt and brown under the grill
Then covered in chilli pine nut dressing:
1 lemon
1 crushed garlic clove
sprinkle of Chili flakes
2 spoons pine nuts
3 spoons of olive oil
Last but not least was Spinach & Feta Filo
Nomnom. Meal with a view. It all went down a treat... which I am now doubting is good news as mum already has her next requests in for me.
But deffo worth a shot even if your a complete beginner like me- all done within an hour and looks pretty pro :)
